There's nothing worse than trying to make a single serving of pancakes. I always end up making way too many and rather than throw them away I usually eat them. I've come up with this recipe that makes two decent size pancakes that are low in calories. I personally like whizzing these up in my magic bullet because it's quick and easy with little cleanup- they can just as easily be made in a bowl with a whisk.
Single Serving Pancakes
1/3 c. flour
1/2 t. baking powder
1 packet artificial sweetener (I prefer Splenda®)
1/4 c. egg white substitute
2 T. water
1 t. vanilla extract (maple extract is also awesome)
Mix all the ingredients together until there are no lumps. Half the batter per pancake.
My pancakes were accompanied by 2 strips of chicken bacon and Aunt Jemima Light Syrup.
Pancakes - 200 cals; 2 strips chicken bacon - 60 cals; 1.5 T Light Pancake Syrup - 40 cals
Total Calorie Count: 300 calories
